Crockpot Beef Stew Recipe

  • 2lbs triple r pastures beef stewing meat (I like to chop ours into smaller bites, but that is up to you)
  • 2T minced garlic
  • 1 small onion, chopped
  • 3-4 medium potatoes, chopped
  • 3 cups carrots, chopped
  • 1 cup celery, chopped
  • 4 cups beef broth (I sometimes use chicken broth instead)
  • 3/4 cup red wine 
  • 1 small can of tomato paste

  • 1 Bay leaf
  • 1 T rosemary
  • 1 T thyme
  • Salt and pepper to taste

  • 1 cup frozen peas
  • 2T corn starch
  • 1/2 cup water

  1. Heat olive oil and brown the beef, about 2 minutes per side. Transfer to crockpot.
  2. Add more oil to the pan and sauté the onion until tender (3-5 min). Transfer to crockpot. 
  3. Add all remaining ingredients, except frozen peas and corn starch, to the crockpot.
  4. Cook on high for 4-5 hours or low for 8-9 hours until beef is tender. 
  5. Mix corn starch into a half cup of water and then whisk into the crockpot. 
  6. Add frozen peas. Let cook for another 10-15min until thickened and heated through. 
  7. Enjoy! :)
