Crockpot Beef Stew Recipe

- 2lbs triple r pastures beef stewing meat (I like to chop ours into smaller bites, but that is up to you)
- 2T minced garlic
- 1 small onion, chopped
- 3-4 medium potatoes, chopped
- 3 cups carrots, chopped
- 1 cup celery, chopped
- 4 cups beef broth (I sometimes use chicken broth instead)
- 3/4 cup red wine
- 1 small can of tomato paste
- 1 Bay leaf
- 1 T rosemary
- 1 T thyme
- Salt and pepper to taste
- 1 cup frozen peas
- 2T corn starch
- 1/2 cup water
- Heat olive oil and brown the beef, about 2 minutes per side. Transfer to crockpot.
- Add more oil to the pan and sauté the onion until tender (3-5 min). Transfer to crockpot.
- Add all remaining ingredients, except frozen peas and corn starch, to the crockpot.
- Cook on high for 4-5 hours or low for 8-9 hours until beef is tender.
- Mix corn starch into a half cup of water and then whisk into the crockpot.
- Add frozen peas. Let cook for another 10-15min until thickened and heated through.
