Mr. Gilbert's Chicken

Finding new recipes is always a challenge. Chris and Christina were generous enough to share a favorite recipe. I am looking forward to trying it myself.

"When I asked my almost-five-year-old son what he would like for his birthday dinner, he replied, “Mr. Gilbert’s chicken! And sweet potatoes… aaaaand chocolate cupcakes with raspberries, of course” (He really talks like that!). A few weeks later, I asked my mother-in-law what our family could bring for 4th of July dinner, and she requested “Mr. Gilbert’s chicken!”  


Needless to say, we are BIG fans of Triple R Pastures’ chickens. The deliciousness and quality are undeniable. Then, consider the nutritional benefits of this centerpiece bird… and it feels really good to share it with family and friends.


I’ve had fun experimenting with how to cook our chickens, but I keep coming back to this recipe and adapting it to fit what we have in our fridge. It’s Samin Nosrat’s famous Buttermilk-Marinated Roast Chicken… with a few tweaks.

The unanimous favorite came from these tweaks:

  • instead of buttermilk, I used 1 ⅔ cups milk + 1/3 cup lemon juice
  • in addition to the salt in the marinade, I added about 2 cloves of crushed garlic 
  • before popping it into the oven, I snuck a few squares of grass-fed butter under the breast skin for extra juiciness


Really pay attention to Samin’s advice on changing the angle of the bird's legs midway through the roasting process (while having the chicken breasts toward the center of the oven). This helps keep the chicken breasts from drying out! 100% worth the effort.
